Chilli Con Carne

To make this quick Chilli Con Carne you will need the following equipment Chopping Board, Sharp Knife, Large Frying Pan, Large Spoon (wooden or other), Measuring Jug, Tablespoon and Teaspoon

Main Ingredients

  • Half tablespoon olive oil
  • 450g minced beef or lamb
  • 1-2 onions, peeled and finely chopped
  • 2-3 cloves garlic, peeled and crushed
  • Sauce:
    • ›Half teaspoon chilli powder (optional)
    • ›Half teaspoon ground cumin (optional)
    • ›Teaspoon of sugar or square of dark chocolate (optional)
    • ›400g tin tomatoes
    • ›125ml beef stock or water
  • Salt and black pepper
  • 400g can of red kidney beans
  • Crème fraiche (optional)
  • Boiled rice

Method

  1. Heat the oil in a large frying pan.
  2. Add the meat and brown well. Add the onion and garlic and cook 2-3 minutes.
  3. Add the chilli powder/cumin (if using), tomatoes and stock. Stir well.
  4. Season and bring to the boil. Cook gently for 35 minutes, stirring occasionally.
  5. Add the beans and cook for a further 15 minutes.
  6. Rather than add the teaspoon of sugar, you can stir in a small piece (square) of dark chocolate (about the size of your thumbnail) when you add the beans. Any plain dark chocolate will do.
  7. Serve with rice or tortillas and add salsas and toppings for extra flavour.

Top Tip

Leftovers? Why not use as a tasty topping for a baked potato or wrapped in a burrito along with some leafy greens and grated cheese for lunch the next day. Yum!
